Roast Blue Heirloom Potatoes

Recently I was given these beautiful blue heirloom potatoes. Yes, they do look purple but they are known as blue potatoes (??!). A delicious natural gluten and grain free ingredient.
Blue potatoes taste slightly nuttier than their regular white cousin and have additional health benefits as they contain anthocyanins, powerful anti oxidants that help prevent the production of free radicals within the body reducing the risk of many cancers, stroke and heart disease.
After a little research I decided to roast my blue potatoes as they caramelize slightly in the roasting process. and make a great side dish. I’d highly recommend seeking them out when you want a tasty, healthy alternative to sweet or white potatoes.
So here is my simple recipe for healthy roast potatoes, a mini food miracle.

Roast blue potatoes
ingredientS
- Organic, Blue Heirloom Potatoes
- Extra Virgin Olive Oil
- A few sprigs of Rosemary and Thyme
TO COOK
Pre-heat oven to gas mark 4, 180c, 450f
- Lightly cover potatoes in virgin extra olive oil and sprinkle with rosemary and thyme leaves and season with salt and pepper
- Roast in the oven for 20-25 mins and enjoy!
Notes: They will keep well covered in a fridge for up to 3 days. You won’t necessarily find them in your local supermarket but rather at markets, farmers markets and health food shops.

I had these potatoes during my last visit to Japan and they are delicious! I love your recipe for them, easy and yummy!
Thank you. Yes I almost felt like a cheat blogging this as a recipe but they are just so good I had to share. I love Japanese food how were they cooked?
Until recently I lived in Peru. In spring these potatoes were in season & highly prized. I loved them as you say the flavour is nutty & they had a lovely creamy texture, perfect for roasting. I really loved them served with this cheesy, spicy sauce http://perudelights.com/papa-a-la-huancaina/.
Oh that sounds good.:-)
These almost purple potatoes look beautiful 🙂 I’d like to try them, but I don’t think they are easy to find here in Italy
Thank you. They were from an organic supplier in the UK. Oh I love Italy, so many lovely fresh ingredients and food and wine…
